Meet the pitmaster
Hoakie Smoakes BBQ is a veteran-owned food truck and catering company based in Post Falls, Idaho, run by pitmaster Dave Overman.
Dave has cooked competitively as Team Hoakie Smoakes since 2016, including at the World Food Championships and on the KCBS and PNWBA circuits. That competition discipline — temperature, timing, and a respect for the craft — is what shows up on every plate that leaves the truck.
The result is barbecue with a 4.9-star reputation in North Idaho: brisket, ribs, pulled pork, and bacon mac & cheese that keep a steady line at the window every Food Truck Friday.
